Method
Preparation
- 1
Prepare the Chicken
Season the chicken breasts with salt and black pepper on both sides. Dredge each chicken breast in all-purpose flour, shaking off the excess flour.
- 2
Cook the Chicken
In a large skillet over medium-high heat, add olive oil and 2 tablespoons of butter. Once hot, add the floured chicken breasts and cook for about 5-7 minutes on each side, until golden brown and cooked through. Remove chicken from the skillet and set aside.
Sauce Preparation
- 3
- 4
Add Marsala Wine
Pour the Marsala wine into the skillet with the mushrooms, scraping any browned bits from the bottom of the pan. Let it simmer for about 2-3 minutes to reduce slightly.
- 5
Add Chicken Broth
Add the chicken broth to the skillet and bring the mixture to a gentle boil. Cook for an additional 2 minutes.
- 6
Combine Chicken and Sauce
Return the cooked chicken breasts to the skillet, spooning the sauce over them. Let everything simmer together for an additional 5 minutes to meld the flavors.
- 7
Garnish and Serve
Sprinkle chopped fresh parsley over the chicken Marsala just before serving. Serve hot with your choice of side dishes.
