1. Season the Chicken
Pat the chicken thighs dry with paper towels. Season both sides with salt and black pepper.
Cooking
3. Sear the Chicken
In a large skillet, heat olive oil over medium-high heat. Add the seasoned chicken thighs and sear for 5-7 minutes on each side until golden brown. Remove from skillet and set aside.
4. Sauté the Vegetables
In the same skillet, add the chopped onion, minced garlic, sliced carrots, and chopped celery. Sauté for about 5 minutes until the vegetables are softened.
5. Add Mushrooms and Wine
Add the sliced mushrooms to the skillet and cook for an additional 3 minutes. Pour in the Brunello wine, scraping up any browned bits from the bottom of the skillet.
6. Combine and Simmer
Return the seared chicken thighs to the skillet, then add chicken broth, thyme, rosemary, and bay leaf. Bring to a simmer, cover, and cook for 30-35 minutes until the chicken is cooked through.
Serving
7. Garnish and Serve
Remove the bay leaf and transfer the chicken to a serving platter. Spoon the vegetable and sauce mixture over the chicken. Garnish with chopped fresh parsley before serving.
