Grilled Tomatoes

Free Run Eggs

Fried Potatoes with Caramelized Onions

Method

Grilled Tomatoes

1

Prepare the Tomatoes

Preheat the grill to medium-high heat. Slice the tomatoes in half and drizzle with olive oil, salt, and black pepper. Sprinkle fresh basil on top.

2

Grill the Tomatoes

Place the tomatoes cut side down on the grill. Grill for 4-5 minutes, or until they have nice grill marks and are slightly softened. Remove from the grill.

Free Run Eggs

3

Cook the Eggs

In a non-stick skillet, melt the butter over medium heat. Crack the free run eggs into the skillet and cook to your desired doneness (sunny-side up, over-easy, etc.). Season with salt and pepper to taste.

Fried Potatoes with Caramelized Onions

4

Prepare the Potatoes

Peel and cut the potatoes into small cubes. In a large skillet, heat olive oil over medium heat. Add the potatoes and season with salt and pepper. Cook until potatoes are golden brown and tender, about 15-20 minutes.

5

Caramelize the Onions

Meanwhile, slice the onion thinly. In a separate pan, heat a little olive oil over medium-low heat. Add onions and cook slowly, stirring occasionally, until they are soft and caramelized, about 15 minutes. Combine with the fried potatoes before serving.
