Prepare the Potatoes
Wash and peel the Russet potatoes. Cut them into thick strips, about 1/2 inch wide. Soak the potato strips in cold water for at least 30 minutes to remove excess starch.

Drain the soaked potatoes and pat them dry using paper towels or a clean kitchen towel.

In a large deep pot or a fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.
