Prepare the Ingredients

Chop the onion into thin slices. Cut the British banger sausage into bite-sized pieces.

Cook the Bacon

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the local bacon and cook until crispy, about 4-5 minutes. Remove from skillet and set aside.

Cook the Sausage

In the same skillet, add the British banger pieces and cook until browned and cooked through, about 5-6 minutes. Remove and set aside with the bacon.

Caramelize the Onions

Add the remaining tablespoon of olive oil to the skillet. Add the sliced onions and a pinch of salt. Cook over medium-low heat, stirring occasionally, until the onions are caramelized, about 15 minutes.

Cook the Eggs

While the onions are caramelizing, in a separate pan, cook the eggs to your preference (scrambled, fried, etc.). Season with salt and black pepper.

Combine and Serve

Once the onions are caramelized, return the bacon and sausage to the skillet to heat through. Serve the eggs on a plate topped with the bacon, sausage, and caramelized onions.
