Marinate the Pork Belly
In a bowl, combine the pork belly, Sông Cài Gin, and salt. Mix thoroughly to coat the pork evenly. Cover and refrigerate for at least 2 hours, preferably overnight for better flavor.

Cook the Pork Belly
Preheat the oven to 150°C (300°F). Place the marinated pork belly in a baking dish and cover with foil. Bake for 2 hours until tender. Remove from the oven and let it cool before slicing.

Prepare the Cocktail
In a cocktail shaker, combine the Rosselle Spiced Gin, Mây Amaro, Volume Primo Vermouth, Campari, and fish sauce. Fill the shaker with ice and shake well until chilled.

Strain the cocktail into a chilled glass. Garnish with fresh herbs on top. Serve alongside slices of the cooked pork belly for a delightful pairing.
