Wine Making Process

Harvesting
Harvest the Chardonnay grapes from the Côtes des Blancs region at optimal ripeness.

Pressing
Gently press the grapes to extract the juice and separate it from the skins.

Fermentation
Add Champagne yeast to the pressed juice and ferment in a controlled environment at 18-20°C for 2-3 weeks.

Secondary Fermentation
Add sugar and malolactic bacteria for the secondary fermentation in the bottle.

Aging
Age the wine on lees for at least 24 months to develop complexity and flavor.

Riddling and Disgorging
Riddle the bottles to gather sediment near the neck and then disgorge to remove sediment.

Corking
Cork the bottles and allow the wine to rest for a few more months before release.
