Spicy Crab Toast
Method
Mussels Preparation
- 1
Prepare the Mussels
Rinse the PEI mussels under cold water to remove any sand or debris. Discard any mussels that are open and do not close when tapped.
- 2
Cook the Mussels
In a large pot, heat the coconut milk, sake, minced garlic, grated ginger, lime juice, and red chili flakes over medium heat. Once it starts to simmer, add the mussels, cover the pot, and cook for about 5-7 minutes or until all mussels have opened.
- 3
Add Herbs
Once cooked, remove from heat and stir in the fresh cilantro. Season with salt to taste.
Spicy Crab Toast Preparation
- 4
Prepare the Crab Mixture
In a bowl, combine the crab meat, softened cream cheese, sriracha sauce, and chopped green onions. Mix until well combined.
- 5
Toast the Baguette
Preheat the oven to 400°F (200°C). Arrange the baguette slices on a baking sheet, brush with olive oil, and bake for about 5-7 minutes until golden brown.
- 6
Assemble and Serve
Spread the crab mixture generously on each toasted baguette slice. Serve alongside the cooked mussels.
