    Prepare the bread

    Spread a thin layer of softened butter on one side of each slice of sourdough bread.

    Coat with Parmesan

    On a plate, spread the grated parmesan cheese evenly. Take the buttered side of each slice and press it into the parmesan cheese to coat the bread.

Assembling the Sandwich

    Layer the cheeses

    On the unbuttered side of three slices of the coated bread, layer one slice of Swiss cheese, one slice of Vermont white cheddar cheese, and one slice of Fontina cheese.

    Top with bread

    Place the remaining three slices of bread on top, buttered side up, to form three sandwiches.

Grilling

    Heat the skillet

    In a large skillet over medium heat, place the sandwiches in the skillet (two at a time if necessary) and grill until the bread is golden brown and the cheese begins to melt, about 4-5 minutes.

    Flip the sandwiches

    Carefully flip the sandwiches with a spatula and grill the other side until golden brown and the cheese is fully melted, about another 4-5 minutes.

    Remove and slice

    Once both sides are golden and the cheese is melted, remove the sandwiches from the skillet and let them rest for a minute before slicing them into quarters.
