Shrub Base Preparation

Prepare the Strawberries
Wash and hull the fresh strawberries, then chop them into small pieces.

Combine Ingredients
In a medium bowl, combine the chopped strawberries, fresh basil leaves, and granulated sugar. Stir well to coat the strawberries with sugar.

Macerate Mixture
Cover the bowl with plastic wrap and let it sit at room temperature for about 2 hours. This allows the strawberries to release their juices.

Add Vinegar
After maceration, add the apple cider vinegar to the strawberry-basil mixture. Stir well to combine.

Strain the Mixture
Using a fine mesh strainer, strain the mixture into a clean jar or bottle, discarding the solids. Seal the jar and refrigerate for at least 24 hours before using.

Mix the Cocktail
In a glass, combine 2 tablespoons of the strawberry-basil shrub with fresh lemon juice.

Fill the glass with ice cubes to your preference.

Top with Tonic
Pour tonic water over the ice and shrub mixture, stirring gently to combine.

Garnish with a sprig of fresh basil and a few slices of strawberry on top.
