Preparation of Herbaceous Base

    Wash the fresh peppermint, parsley, and sage leaves under cold water. Pat them dry with a paper towel.

    In a large glass jar, combine the fresh peppermint, parsley, sage, dried thyme, and dried basil.

Infusing the Vodka

    Pour the high-proof vodka over the combined herbs in the jar, ensuring all herbs are fully submerged.

    Infusion Process

    Seal the jar tightly and place it in a cool, dark place. Allow the mixture to infuse for at least 2 weeks, shaking gently once a day.

Making the Syrup

    Prepare Simple Syrup

    In a saucepan, combine water and pure cane sugar. Heat over medium heat, stirring until the sugar completely dissolves, then bring to a gentle simmer for 5 minutes.

    Remove from heat and let the syrup cool to room temperature.

Final Assembly

    Strain the Liquid

    Once the infusion period is complete, strain the herb-infused vodka through a fine mesh strainer or cheesecloth into a clean bottle.

    Mix the strained vodka with the cooled simple syrup and lemon juice in a large jar. If desired, add a drop of green food coloring to achieve a vibrant color.
