Limoncello Preparation

    Prepare the Lemons

    Wash the lemons thoroughly under running water to remove any dirt or wax. Pat them dry with a clean towel.

    Zest the Lemons

    Using a vegetable peeler or zester, carefully remove the zest from the lemons, avoiding the bitter white pith. Place the zest into a large glass jar or container.

    Infuse the Vodka

    Pour the vodka over the lemon zest in the jar. Seal the jar tightly and let it sit in a cool, dark place for at least 7 days, shaking it gently every couple of days to help the infusion process.

    Prepare the Simple Syrup

    After the infusion period, combine the granulated sugar and water in a saucepan over medium heat. Stir until the sugar has completely dissolved. Remove from heat and let it cool.

    Combine and Strain

    Once the simple syrup has cooled, strain the lemon zest from the vodka using a fine mesh strainer or cheesecloth. Combine the infused vodka with the simple syrup in a clean bottle.

    Bottle and Chill

    Seal the bottle and refrigerate the limoncello for at least 24 hours before serving. This will help the flavors meld together.
