Hibiscus-Infused Gin Preparation

    Infuse the Gin

    In a clean glass jar, combine 750 ml of Fords Gin with 50 g of dried hibiscus flowers. Seal the jar tightly and let it sit in a cool, dark place for 24 to 48 hours, shaking gently every 12 hours. Taste the infusion periodically until it reaches your desired flavor strength.

    Strain the Infusion

    Once the infusion is ready, strain the gin through a fine mesh strainer or cheesecloth into a clean bottle, discarding the hibiscus flowers. Seal and store the hibiscus-infused gin in the refrigerator for future use.

    Mix the Ingredients

    In a cocktail shaker filled with ice, combine 30 ml of fresh lemon juice and 60 ml of the hibiscus-infused gin. Shake vigorously for about 15 seconds until well chilled.

    Strain and Top

    Strain the mixture into a chilled flute glass. Top with 120 ml of Wycliff Brut sparkling wine, pouring slowly to avoid overflow.

    Add Bitters

    Finish the cocktail by adding 10 dashes of house-made Meyer lemon bitters on top. You can adjust to taste.

    Garnish and Serve

    If desired, garnish with a twist of lemon peel or a small hibiscus flower. Serve immediately and enjoy your HK 75 cocktail!
