Herb Roasted Chicken

    Prepare the Chicken

    Preheat your oven to 425°F (220°C). Rinse the half chicken under cold water and pat it dry with paper towels.

    Season the Chicken

    In a small bowl, mix together the olive oil, minced garlic, chopped rosemary, chopped thyme, salt, pepper, lemon juice, and lemon zest. Rub this mixture all over the chicken, ensuring it is well coated.

    Roast the Chicken

    Place the chicken in a roasting pan, breast side up. Roast in the preheated oven for 50-60 minutes, or until the internal temperature reaches 165°F (74°C). Baste the chicken with the juices halfway through.

Garlic Mashed Potatoes

    Cook the Potatoes

    In a large pot, add the cubed russet potatoes and cover them with cold water. Bring to a boil and cook for about 15-20 minutes, or until the potatoes are fork-tender.

    Drain the potatoes and return them to the pot. Add the butter, milk, minced garlic, salt, and pepper. Mash until smooth and creamy. Adjust seasoning to taste.

Seasonal Vegetables

    In a large bowl, combine the sliced carrots and zucchini. Drizzle with olive oil and sprinkle with salt and pepper. Toss to coat.

    Spread the vegetables on a baking sheet and roast in the oven alongside the chicken for the last 20-25 minutes of the chicken's cooking time, or until tender and slightly caramelized.
