Chicken Marinade

In a large bowl, combine buttermilk, garlic powder, onion powder, paprika, cayenne pepper, salt, black pepper, thyme, and rosemary. Mix well.

Marinate the Chicken
Add the chicken thighs to the marinade, ensuring they are fully submerged. Cover the bowl and refrigerate for at least 4 hours, preferably overnight.
Chipotle Mayo

Make the Chipotle Mayo
In a small bowl, combine mayonnaise, finely chopped chipotle peppers, lime juice, and garlic powder. Mix until smooth. Adjust seasoning as needed and refrigerate until ready to use.
Quick-Pickled Onions

Prepare the Pickled Onions
Slice the red onion thinly and place it in a jar. In a small saucepan, combine apple cider vinegar, sugar, and salt. Heat until sugar and salt dissolve. Pour the mixture over the onions, ensuring they are fully submerged. Let it sit for at least 30 minutes.
Frying the Chicken

Fry the Chicken
Heat oil in a deep skillet over medium-high heat. Remove chicken from marinade and let excess drip off. Fry the chicken thighs for about 8-10 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.
Assembling the Sandwich

Assemble the Sandwich
Toast the burger buns if desired. Spread a generous amount of chipotle mayo on the bottom half of each bun. Place a piece of fried chicken on top, followed by lettuce, sliced tomato, and quick-pickled onions. Top with the other half of the bun and serve immediately.
