Prepare the Pears
Wash the ripe pear under cold water. Cut it in half, remove the core, and slice it thinly.

Prepare the Cheese
Grate or slice the Swiss and Fontina cheese into thin pieces to ensure even melting.

Butter the Bread
Spread 1 tablespoon of unsalted butter on one side of each slice of sourdough bread.

Assemble the Sandwich
On the unbuttered side of two slices of bread, layer smoked pit ham, followed by sliced pears, then top with Swiss and Fontina cheese. Season with a pinch of salt and black pepper. Top with the remaining two slices of bread, buttered side up.

Grill the Sandwich
Heat a skillet over medium heat. Once hot, place the assembled sandwich in the skillet. Grill for about 3-4 minutes until the bread is golden brown and crispy. Carefully flip the sandwich and grill the other side for an additional 3-4 minutes until the cheese is melted and the bread is crispy.

In a small bowl, mix honey with cayenne pepper. Drizzle this mixture over the grilled sandwich before serving for a spicy-sweet kick.
