Prepare the Potatoes
Peel the Russet potatoes and cut them into thin strips, approximately 1/4 inch thick.

Dry the Potatoes
Drain the potatoes and pat them dry using paper towels to remove as much moisture as possible.

Heat the Oil
In a deep fryer or large pot, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Carefully add the potatoes in batches to the hot oil and fry for about 4-5 minutes until golden brown.

Season and Serve
Remove the fries from the oil, drain on paper towels, and season with salt and pepper to taste. Serve immediately.

Shred the Potatoes
Once cooled, shred the potatoes using a box grater or food processor.

Mix the Ingredients
In a large bowl, combine the shredded potatoes, cornstarch, salt, pepper, onion powder, and garlic powder. Mix well until combined.

Form the Tater Tots
Using your hands, form small cylindrical shapes with the potato mixture, about 1 inch long.

In a deep fryer or large pot, heat the vegetable oil to 350°F (175°C).

Carefully drop the formed tater tots into the hot oil and fry for about 4-5 minutes, or until golden brown.
