Prep the Potatoes
Wash and peel the Russet potatoes. Cut them into even strips, about 1/4 inch thick.

Soak the Fries
Place the cut fries in a large bowl of cold water and soak for at least 30 minutes to remove excess starch.

Dry the Fries
Drain the fries and lay them out on a clean kitchen towel. Pat them dry thoroughly.

Heat the Oil
In a deep fryer or a large pot, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Working in batches, carefully add the fries to the hot oil and fry for about 5-7 minutes or until golden brown and crispy. Remove and drain on paper towels.

While the fries are still hot, sprinkle with salt, black pepper, and paprika to taste. Serve immediately.

Mash the Potatoes
Drain the potatoes and let them cool slightly. Then, mash them in a large bowl until smooth.

Add cornstarch, salt, black pepper, onion powder, and garlic powder to the mashed potatoes. Mix until well combined.
