Raspberry Juice Caviar

Method

Brownie Base Preparation

  1. 1

    Preheat Oven

Preheat your oven to 350°F (175°C). Grease and line a 9x13 inch baking pan with parchment paper.

  2. 2

    Melt Butter

In a medium saucepan over low heat, melt the unsalted butter. Remove from heat and stir in the cocoa powder until combined.

  3. 3

    Mix Ingredients

In a large mixing bowl, combine the melted butter and cocoa mixture with sugar, followed by adding the eggs one at a time, mixing well after each addition. Stir in the vanilla extract, salt, and baking powder.

  4. 4

    Add Flour

Gently fold in the all-purpose flour until just combined. Be careful not to overmix.

  5. 5

    Bake Brownies

Pour the brownie batter into the prepared baking pan and spread evenly. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.

  6. 6

    Cool

Remove from the oven and let the brownies cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.

Raspberry Juice Caviar Preparation

  1. 7

    Prepare Raspberry Mixture

In a blender, combine fresh raspberries, sugar, and water. Blend until smooth and then strain the mixture through a fine-mesh sieve to remove seeds.

  2. 8

    Heat Mixture

Pour the strained raspberry juice into a saucepan and sprinkle agar-agar powder over the top. Allow it to sit for about 5 minutes to bloom, then heat over medium heat until it comes to a gentle boil, stirring constantly.

  3. 9

    Create Caviar

Once the mixture is boiling, remove it from the heat. Use a dropper or syringe to drop small droplets of the mixture into a bowl of vegetable oil. The droplets will form small caviar-like spheres.

  4. 10

    Set Caviar

Let the caviar sit in the oil for about 5-10 minutes, then remove them using a slotted spoon and rinse in cold water to remove excess oil.
