Prepare the Walleye
Rinse the walleye fillets under cold water and pat them dry with paper towels. Cut the fillets into bite-sized pieces, about 1-2 inches each. Season the pieces with salt and black pepper, ensuring they are evenly coated.

Make the Beer Batter
In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, garlic powder, onion powder, salt, and black pepper. Whisk the dry ingredients together until well mixed. Gradually pour in the beer while whisking continuously until the batter is smooth and free of lumps. The batter should be thick enough to coat the back of a spoon.

Fry the Walleye Bites
Dredge each piece of walleye in the beer batter, ensuring it is fully coated. Carefully drop the battered fish pieces into the hot oil in batches, being careful not to overcrowd the pan. Fry for 3-4 minutes or until the bites are golden brown and crispy, turning halfway through for even cooking. Once cooked, use a slotted spoon to remove the bites and place them on a plate lined with paper towels to drain excess oil.

In a small bowl, mix together the mayonnaise, finely chopped dill pickles, lemon juice, chopped capers, salt, and black pepper. Stir until well combined and refrigerate until ready to serve.
