    Prepare the Syrup

    In a saucepan, combine water and granulated sugar. Bring to a boil over medium heat, stirring until the sugar dissolves. Remove from heat and stir in orange juice. Set aside to cool.

    Preheat the Oven

    Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking dish.

    Make the Cake Batter

    In a large bowl, cream together the unsalted butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the orange zest and vanilla extract.

    Combine Dry Ingredients

    In a separate bowl, whisk together the all-purpose flour and baking powder. Gradually add the dry ingredients to the wet mixture, alternating with the orange juice, starting and ending with the flour mixture. Mix until just combined.

    Bake the Cake

    Pour the batter into the prepared baking dish and smooth the top. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

    Soak the Cake

    Once baked, remove the cake from the oven and immediately pour the cooled syrup over the hot cake. Allow it to absorb the syrup for at least 1 hour before serving.

    Finish and Serve

    Dust the top of the cake with powdered sugar before slicing and serving. Enjoy your Portokalopita!
