1. Prepare the crust
Preheat your oven to 325°F (160°C). In a bowl, combine graham cracker crumbs and melted butter until well mixed. Press the mixture into the bottom of a 9-inch springform pan to form an even layer. Bake for 10 minutes and then let it cool.
2. Make cheesecake filling
In a large mixing bowl, beat the cream cheese and sugar together until smooth and creamy. Add sour cream and vanilla extract, mixing until incorporated. Add the eggs, one at a time, mixing on low speed until just combined. Do not overmix.
3. Combine and bake
Pour the cheesecake mixture over the cooled crust in the springform pan. Bake for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for 1 hour.
4. Chill
Once cooled, refrigerate the cheesecake for at least 4 hours, preferably overnight.
