Prepare the Beans
Soak the white giant beans in water overnight. Drain and rinse before cooking.

Cook the Beans
In a large pot, add the soaked beans and enough water to cover them. Bring to a boil, then reduce the heat and simmer for about 1 hour or until the beans are tender. Drain and set aside.

Make the Sauce
In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes. Stir in minced garlic and cook for an additional minute.

Combine Ingredients
Add the canned diced tomatoes, vegetable broth, dried oregano, salt, and black pepper to the skillet. Bring to a simmer and cook for about 10 minutes.

Add Beans
Stir in the cooked white giant beans and simmer for another 10-15 minutes, allowing the flavors to meld.

Serve
Transfer the beans to a serving dish, top with crumbled feta cheese and chopped parsley. Serve warm.
