    Prepare the Nut Mixture

    In a bowl, combine the finely chopped walnuts, pistachios, granulated sugar, and ground cinnamon. Mix well and set aside.

    Prepare the Phyllo Dough

    Thaw the phyllo dough according to package instructions. Preheat the oven to 350°F (175°C).

    Assemble the Baklava

    Brush a 9x13 inch baking dish with melted butter. Lay one sheet of phyllo dough in the dish and brush it with melted butter. Repeat this process, layering 8 sheets of phyllo and brushing each with butter. Spread a layer of the nut mixture over the phyllo. Add 3 more layers of phyllo, brushing each with butter, then add another layer of nut mixture. Repeat until all the nuts are used, finishing with a top layer of phyllo (about 8 sheets).

    Cut and Bake

    Using a sharp knife, cut the baklava into diamond or square shapes. Bake in the preheated oven for 45-50 minutes, or until golden brown.

    Prepare the Syrup

    While the baklava is baking, combine water, honey, and vanilla extract in a saucepan over medium heat. Bring to a boil, then reduce heat and let simmer for about 10 minutes. Remove from heat and let cool.

    Finish the Baklava

    Once the baklava is done baking, remove it from the oven and immediately pour the cooled syrup over it, ensuring all pieces are well soaked. Let it cool completely before serving.
