Prepare the Peppers
Wash the fresh red chili peppers thoroughly under cold water. Remove the stems and slice them in half lengthwise, discarding any seeds if you prefer a milder sauce.

Peel the Garlic
Peel the garlic cloves and set aside.
Cooking

Combine Ingredients
In a medium-sized saucepan, add the prepared chili peppers, garlic cloves, white vinegar, and salt. If using optional ingredients, also add the sugar and smoked paprika at this stage.

Simmer the Mixture
Bring the mixture to a boil over medium heat, then reduce to a simmer. Allow it to cook for about 15-20 minutes until the peppers are soft.

Blend the Sauce
Remove the saucepan from heat. Allow the mixture to cool slightly, then transfer it to a blender. Blend until smooth. If you prefer a thinner sauce, you can add a little more vinegar to reach your desired consistency.

If using lime juice, add it to the blender and pulse briefly to combine. Taste the sauce and adjust seasoning if necessary.
