Prepare the Beans

Rinse the black beans under cold water and soak them overnight. Drain and cook in a pot with enough water until tender, about 1-1.5 hours.

Cook the Rice

In a separate pot, rinse the rice until the water runs clear. Add 2 cups of water and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes or until the rice is cooked.

Fry the Plantains

Peel the plantains and slice them diagonally. In a skillet, heat vegetable oil over medium heat and fry the plantain slices until golden brown on both sides. Remove and drain on paper towels.

Sauté the Vegetables

In the same skillet, add more oil if needed, then sauté diced bell pepper, onion, and minced garlic until softened. Add cumin, oregano, salt, and black pepper, cooking for another 2 minutes.

Combine Ingredients

Mix the cooked black beans with the sautéed vegetables and adjust seasoning. Serve the black bean mixture over the rice with fried plantains on the side.
