1. Make the Pico de Gallo
In a bowl, combine diced tomatoes, onion, cilantro, lime juice, and salt. Mix well and set aside.
2. Prepare the Cilantro Sauce
In a blender or food processor, combine sour cream, cilantro, garlic, lime juice, and salt. Blend until smooth and set aside.

3. Assemble the Quesadillas
On one half of each tortilla, layer shredded roasted chicken, sliced avocado, and shredded cheese. Fold the tortilla in half.
4. Cook the Quesadillas
Heat a skillet over medium heat. Cook each quesadilla for about 3-4 minutes on each side or until golden brown and the cheese is melted.
5. Serve
Cut the quesadillas into wedges and serve hot with pico de gallo and cilantro sauce on the side.
