Preparation
Prepare the Chicken Fingers
Cut the chicken breast into strips. In three separate bowls, place flour, beaten eggs, and breadcrumbs mixed with paprika, garlic powder, onion powder, salt, and black pepper. Dredge each chicken strip in flour, dip into the eggs, and coat with breadcrumbs.
Cook the Chicken Fingers
Heat cooking oil in a large skillet over medium heat. Fry the chicken fingers in batches for about 5-6 minutes on each side, or until golden brown and cooked through. Drain on paper towels.
Prepare the Roasted Potatoes
Preheat the oven to 425°F (220°C). Cut the potatoes into wedges, toss with olive oil, salt, pepper, and rosemary. Spread on a baking sheet and roast for 30-35 minutes, or until crispy and golden.
Make the Coleslaw
In a large bowl, combine shredded cabbage and grated carrots. In a separate bowl, mix mayonnaise, apple cider vinegar, sugar, salt, and pepper. Pour the dressing over the cabbage mixture and toss well.

Plate the Dish
Serve the chicken fingers alongside the roasted potatoes and coleslaw. Enjoy!
