Preparation Steps
Prepare the Yuca
Peel the yuca and cut it into chunks. Boil in salted water until tender, about 20-25 minutes. Drain and let cool.
Make the Dough
Once the yuca is cool, mash it in a large bowl until smooth. Mix in the crumbled queso fresco, egg, cornstarch, salt, and black pepper until well combined.
Shape the Buñuelos
Take a small amount of the dough and form it into small balls or patties, about the size of a golf ball.
Fry the Buñuelos
Heat oil in a deep frying pan over medium heat. Fry the buñuelos in batches until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.
Serve
Serve hot with your choice of side sauce.
