Pulled Pork

Cook the Pork
In a slow cooker, combine pork shoulder, onion, garlic, smoked paprika, cumin, brown sugar, salt, black pepper, apple cider vinegar, and water. Cook on low for 8 hours or until the pork is tender.

Shred the Pork
Once cooked, remove the pork from the slow cooker and shred it using two forks. Return the shredded pork to the slow cooker and mix with the juices.
Coleslaw

Prepare the Coleslaw
In a large bowl, combine the shredded cabbage, grated carrot, mayonnaise, apple cider vinegar, sugar, salt, and black pepper. Toss well to combine and refrigerate until ready to serve.

Make the Arepas
In a mixing bowl, combine arepa flour, water, and salt. Mix until a dough forms. Divide the dough into 6-8 equal portions and shape each into a disc about 1/2 inch thick.

Assemble the Arepas
Slice open each arepa and fill with pulled pork, top with coleslaw, and sprinkle with chopped greens. Serve immediately.
