Beef Preparation

    Cook the Beef

    In a large pot, combine the beef, onion, garlic, cumin, bay leaves, salt, black pepper, and water. Bring to a boil, then reduce to a simmer and cover. Cook for about 2-3 hours or until the beef is tender. Shred the beef with two forks and set aside.

Bean Preparation

    Prepare the Black Beans

    In a saucepan, sauté the onion and garlic until translucent. Add the black beans and cumin, then stir and cook for about 10 minutes. Season with salt to taste.

Plantain Preparation

    Fry the Plantains

    Peel and slice the ripe plantains diagonally. Heat oil in a pan over medium heat and fry the plantain slices until golden brown on both sides. Drain on paper towels.

Garlic Sauce Preparation

    In a bowl, combine mayonnaise, minced garlic, and lemon juice. Mix well and set aside.

    In a bowl, mix the pre-cooked cornmeal, warm water, and salt until a dough forms. Divide the dough into balls and flatten them into discs. Cook on a hot griddle or skillet for about 5-7 minutes on each side or until golden and cooked through.

    Assemble the Arepas

    Slice the cooked arepas open and fill them with shredded beef, black beans, fried plantains, sliced avocado, and a drizzle of garlic sauce.
