Arepa Preparation

Make the Arepa Dough

In a large bowl, mix the cornmeal, water, and salt until a smooth dough forms. Let it rest for 5 minutes.

Shape the Arepas

Divide the dough into 8 equal portions and shape each into a flat disc, about ½ inch thick.

Cook the Arepas

Heat vegetable oil in a skillet over medium heat. Cook the arepas for 5-7 minutes on each side until golden brown and cooked through. Set aside.

Chorizo Preparation

Cook the Chorizo

In a skillet over medium heat, cook the ground pork until browned. Add chipotle peppers, garlic, cumin, paprika, salt, and pepper. Cook for an additional 5 minutes until fragrant.

Spicy Mayo Preparation

Prepare the Spicy Mayo

In a small bowl, mix together mayonnaise, sriracha, and lime juice until well combined.

Assemble the Arepas

Cut the cooked arepas in half and spread a layer of black beans, followed by the chipotle chorizo. Drizzle with spicy mayo and top with mixed greens. Serve warm.
