Making the Cookies

Prepare the Dough
In a mixing bowl, cream the unsalted butter and powdered sugar until light and fluffy. Add the egg yolks, vanilla extract, and mix well.

Combine Dry Ingredients
In a separate bowl, whisk together the all-purpose flour, cornstarch, baking powder, and salt.

Mix Together
Gradually add the dry ingredients to the butter mixture, mixing until a soft dough forms. Wrap the dough in plastic wrap and refrigerate for at least 1 hour.
Baking the Cookies

Preheat the Oven
Preheat your oven to 350°F (175°C).

Shape the Cookies
On a floured surface, roll out the dough to about 1/4 inch thickness. Cut out circles using a cookie cutter.

Bake the Cookies
Place the circles on a baking sheet lined with parchment paper and bake for 10-12 minutes or until lightly golden. Remove from the oven and let them cool completely.
Assembling the Alfajores

Fill the Cookies
Spread a generous amount of dulce de leche on the flat side of one cookie and sandwich it with another cookie.

Roll the edges of the filled cookies in shredded coconut to coat.
