Mashing

    Prepare the Mash

    Heat 5 gallons of water to 165°F (74°C). Add the pale malt and caramel malt to the water, maintaining the temperature at 152°F (67°C) for 60 minutes.

Boiling

    Boil the Wort

    After mashing, sparge the grains and collect the wort. Bring the wort to a boil and add the Citra, Mosaic, and Simcoe hops. Boil for 60 minutes.

Fermentation

    Cool and Ferment

    Cool the wort rapidly to 68°F (20°C) and transfer it to a fermentation vessel. Pitch the yeast and let it ferment for 1-2 weeks.

Bottling

    Bottle the Beer

    After fermentation is complete, dissolve the priming sugar in a small amount of water and add it to the beer. Bottle and cap the beer, then let it carbonate for 1-2 weeks at room temperature.
