Prepare the Potatoes

Wash and peel the potatoes. Cut them into small cubes and place them in a pot of salted boiling water. Cook until tender, about 10-12 minutes. Drain and let cool.

Mix the Dressing

In a large bowl, combine mayonnaise, sour cream, dijon mustard, chopped dill, salt, and black pepper. Whisk until smooth and well blended.

Combine Ingredients

Once the potatoes have cooled, add them to the dressing along with the diced dill pickles, chopped red onion, and additional dill if desired. Gently fold the mixture until the potatoes are well coated.

Chill and Serve

Cover the salad with plastic wrap and refrigerate for at least 1 hour before serving to allow the flavors to meld. Serve chilled.
