Brewing Process

Mashing
In a large pot, heat 3 gallons of water to 165°F (74°C). Add the crushed pale malt, crystal malt, chocolate malt, and caramel malt, stirring well. Maintain the temperature at around 150-155°F (65-68°C) for 60 minutes.

Sparging
After mashing, sparge with enough hot water to collect 6 gallons of wort in the brew kettle.

Boiling
Bring the wort to a boil. Once boiling, add the hopped malt extract and the Fuggles hops. Boil for 60 minutes, adding the East Kent Goldings hops in the last 15 minutes.

Cooling
After boiling, cool the wort quickly using a wort chiller or an ice bath until it reaches around 70°F (21°C).

Fermentation
Transfer the cooled wort to a sanitized fermentation vessel. Add the yeast and seal with an airlock. Allow to ferment for about 1-2 weeks at a temperature between 65-70°F (18-21°C).

Bottling
Once fermentation is complete, prepare a priming sugar solution by dissolving the priming sugar in a small amount of boiling water. Add this solution to the bottling bucket. Transfer the beer to the bottling bucket, mix gently, and bottle with caps.

Conditioning
