Prepare the Pork Belly

Preheat your oven to 150°C (300°F). Score the skin of the pork belly in a crisscross pattern, ensuring not to cut into the meat. Rub the salt, black pepper, and five-spice powder all over the pork belly, making sure to get it into the scored skin.

Cook the Pork Belly

Place the pork belly on a rack in a roasting pan, skin side up. Roast in the preheated oven for about 2 hours, or until the meat is tender.

Crisp the Skin

Increase the oven temperature to 240°C (465°F) and cook for an additional 20-30 minutes, or until the skin is crispy and golden brown. Keep an eye on it to prevent burning.

Prepare the Hoisin Dipping Sauce

In a small bowl, mix together the hoisin sauce, rice vinegar, and minced garlic cloves. Adjust seasoning to taste.

Serve

Remove the pork belly from the oven and let it rest for 10 minutes. Slice into bite-sized pieces and serve with the hoisin dipping sauce.
