Prepare the Ingredients
Chop the onion and garlic finely. Beat the eggs in a bowl and set aside. Rinse the fresh basil leaves and roughly tear them.
Cook the Eggs
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium heat. Pour in the beaten eggs and scramble until fully cooked. Remove the eggs from the pan and set aside.
Sauté Onion and Garlic
In the same skillet, add the remaining tablespoon of oil. Add the chopped onion and garlic, sautéing until the onion becomes translucent.
Add Rice and Soy Sauce
Add the cooked jasmine rice to the skillet, breaking apart any clumps. Pour in the soy sauce and stir-fry for about 3-4 minutes until the rice is heated through.
Combine Ingredients
Add the scrambled eggs back to the skillet along with the fresh basil leaves. Stir everything together and season with salt and pepper to taste. Cook for an additional 1-2 minutes.
Serve
Remove from heat and serve hot. Enjoy your Basil Fried Rice!
