    Prepare the Vegetables

    Wash and dice the potatoes, bell pepper, zucchini, and carrot into small, uniform pieces.

    Cook the Potatoes

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced potatoes and cook for about 10 minutes, stirring occasionally, until they begin to soften.

    Add Vegetables

    Add the bell pepper, zucchini, carrot, and minced garlic to the skillet. Continue to cook for another 5-7 minutes, stirring occasionally.

    Cook the Tofu

    While the vegetables are cooking, drain and cube the tofu. In a separate pan, heat the remaining tablespoon of olive oil over medium heat and add the tofu cubes. Cook until golden brown on all sides, about 8-10 minutes.

    Combine and Season

    Once the vegetables are tender, add the cooked tofu to the skillet. Season with salt, black pepper, paprika, and chopped parsley. Stir well to combine and cook for an additional 2-3 minutes.

    Serve

    Serve the veggie hash hot, garnished with extra parsley if desired.
