Make the Custard
In a large bowl, whisk together the eggs, milk, vanilla extract, and cinnamon until well combined.

Prepare the Bread
Dip each slice of bread into the egg mixture, ensuring both sides are coated. Allow excess custard to drip off.

Cook the French Toast
In a large skillet or griddle, melt 2 tablespoons of butter over medium heat. Add the coated bread slices in batches and cook for about 3-4 minutes on each side, or until golden brown. Repeat with remaining slices, adding more butter as needed.

Candy the Pecans
In a small saucepan over medium heat, combine sugar and chopped pecans. Stir continuously until sugar melts and coats the pecans, about 5-7 minutes. Remove from heat and let cool.

Grill the Bananas
In the same skillet, add sliced bananas and cook for about 2-3 minutes on each side until golden and caramelized.

Stack the French toast on plates, top with grilled bananas, candied pecans, and drizzle with maple syrup.
