Sauté Onions
In a skillet, melt 1 tablespoon of butter over medium heat. Add the sliced red onions and sauté until they are translucent and slightly caramelized, about 5-7 minutes. Season with salt and pepper. Remove from skillet and set aside.

Prepare Sandwich
In the same skillet, melt the remaining tablespoon of butter. Place two slices of rye bread in the skillet. Spread 1 tablespoon of Dijon mustard on each slice. Layer the corned beef evenly on top of the mustard, followed by the sautéed onions and Swiss cheese slices.

Grill Sandwich
Top the sandwich with the remaining slices of rye bread. Grill on medium heat until the bread is golden brown and the cheese is melted, about 3-4 minutes per side.
