    Prepare the Chicken

    In a bowl, mix flour, salt, and pepper. Dredge chicken thighs in the flour mixture until fully coated.

    Fry the Chicken

    In a large skillet, heat oil over medium heat. Add sage leaves and fry for 1 minute. Add breaded chicken and fry for about 6-7 minutes on each side until golden brown and cooked through. Remove and let rest.

    Cook the Eggs and Bacon

    In the same skillet, add bacon and cook until crispy. Remove and set aside. Crack eggs into the skillet and cook sunny-side up or to preferred doneness.

    Make the Syrup Reduction

    In a small saucepan, simmer maple syrup over low heat until reduced by half, about 5-10 minutes.

    Prepare the Sides

    Griddle the mashed potatoes until golden on the outside. Serve sliced tomatoes fresh.

    On a plate, arrange the fried chicken, eggs, bacon, griddled mashed potatoes, sliced tomatoes, and biscuits. Drizzle the syrup reduction on top and garnish with fresh fruit.
