Assemble the Benedict

Fry the Chicken
In a large bowl, marinate the chicken breasts in buttermilk for at least 1 hour. In another bowl, combine flour, sage, salt, black pepper, and cayenne. Remove chicken from buttermilk, dredge in the flour mixture, and fry in hot oil until golden brown and cooked through, about 6-8 minutes. Drain on paper towels.

Toast the English Muffins
While the chicken is frying, split the English muffins and toast them until golden brown.

Assemble
On each toasted muffin half, place a piece of fried chicken, top with a poached egg, and drizzle with the chipotle cream sauce. Serve immediately.
