Preparation Steps

Prepare the Chicken
In a bowl, mix flour, cornstarch, salt, pepper, and garlic powder. Dip each chicken breast in buttermilk, then dredge in the flour mixture. Place sage leaves on top of the chicken breast.

Fry the Chicken
In a large skillet, heat vegetable oil over medium-high heat. Fry the chicken breasts for about 6-7 minutes on each side, or until golden brown and cooked through. Remove and place on a paper towel to drain excess oil.

Prepare the Salad
In a large bowl, combine mixed greens, sliced green apple, caramelized pecans, crumbled blue cheese, and diced tomato. Drizzle with mango vinaigrette and toss gently.

Assemble the Dish
Place a generous portion of the salad on a plate and top with the sage fried chicken breast. Serve immediately.
