    Prepare the Potatoes

    Preheat your oven to 400°F (200°C). Wash the russet potatoes thoroughly and poke a few holes in them with a fork.

    Bake the Potatoes

    Place the potatoes directly on the oven rack and bake for about 45-60 minutes, or until they are tender. Remove from the oven and let cool slightly.

    Scoop and Season

    Once the potatoes are cool enough to handle, cut them in half lengthwise and scoop out some of the flesh, leaving about 1/4 inch of potato on the skin. Brush the insides of the skins with olive oil, and season with salt and black pepper.

    Add Toppings and Bake Again

    Place the potato skins on a baking sheet, and fill them with shredded cheddar cheese and crumbled bacon. Return to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

    Serve

    Remove from the oven, and drizzle with sour cream and sprinkle with chopped chives. Serve hot.
