    Prepare the Chips

    Peel the potatoes and cut them into thick fries. Rinse in cold water and pat dry with paper towels.

    Fry the Potatoes

    Heat vegetable oil in a deep fryer or large pot to 325°F (160°C). Fry the potatoes in batches for about 5-6 minutes until soft but not colored. Remove and drain on paper towels.

    Make the Batter

    In a mixing bowl, combine all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the beer until the batter is smooth and thick.

    Prepare the Fish

    Pat the cod fillets dry with paper towels and season with a little salt and pepper.

    Fry the Fish

    Increase the oil temperature to 350°F (175°C). Dip each cod fillet into the batter, allowing excess to drip off. Carefully lower the battered fish into the hot oil and fry for 5-7 minutes or until golden brown and crispy. Remove and drain on paper towels.

    Finish the Chips

    After frying the fish, increase the oil temperature again to 375°F (190°C). Fry the chips until golden and crispy, about 3-4 minutes. Drain on paper towels and season with salt.

    Serve the beer-battered fish alongside the crispy fries. Enjoy with tartar sauce or malt vinegar, if desired.
