    Prepare the Milk

    In a large pot, heat the milk over medium heat until it reaches 85°F (29°C). Stir gently to avoid scorching.

    Add the Vinegar and Culture

    Remove the pot from heat and stir in the white vinegar and cheese culture. Let it sit for 5 minutes.

    Add Rennet

    Dilute the rennet in 1/4 cup of cool, non-chlorinated water, then stir it into the milk mixture. Let it sit undisturbed for 30-60 minutes until curds form.

    Cut the Curds

    Using a long knife, cut the curds into 1-inch cubes. Let them rest for another 5 minutes.

    Cook the Curds

    Gently heat the curds over low heat, stirring occasionally, until they reach 105°F (40°C). This should take about 10-15 minutes.

    Drain the Curds

    Pour the curds into a colander lined with cheesecloth. Sprinkle with salt and let them drain for about 5-10 minutes.

    Once drained, transfer the curds to a bowl and knead gently to combine. You can shape them into small balls or leave them as is.
