Burger Preparation

Prepare the Beef Patties
In a bowl, combine ground beef, salt, and black pepper. Form the mixture into two equal patties.

Cook the Bacon
In a skillet over medium heat, cook the bacon until crispy. Remove and drain on paper towels.

Cook the Burger Patties
In the same skillet, cook the beef patties for about 4-5 minutes on each side, or until they reach your desired doneness.

Add Blue Cheese
In the last minute of cooking, place blue cheese on the patties to allow it to melt.

Assemble the Burger
Toast the brioche buns lightly. On the bottom half, layer lettuce, the cooked beef patty with melted blue cheese, bacon, pickled red onions, and tomato. Top with the other half of the bun.

Serve immediately with your favorite side.
