Prepare the Meat Loaf
Preheat your oven to 350°F (175°C). In a large bowl, combine the ground beef, breadcrumbs, eggs, diced onion, minced garlic, Worcestershire sauce, thyme, oregano, salt, and pepper. Mix until just combined. Shape the mixture into a loaf and place it in a greased baking dish. Spread ketchup over the top.

Bake the Meat Loaf
Bake the meat loaf in the preheated oven for 1 hour, or until the internal temperature reaches 160°F (70°C).

Roast the Brussel Sprouts
While the meat loaf is baking, toss the halved Brussels sprouts with olive oil, salt, and pepper. Spread them on a baking sheet and roast in the oven for 25-30 minutes until crispy and golden.

Prepare the Mushroom Hash
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped wild mushrooms and sauté until browned and tender. Season with salt and pepper.

Make the Gravy
In a saucepan, heat the remaining tablespoon of olive oil. Stir in the flour and cook for 1-2 minutes. Gradually whisk in the beef broth, and cook until thickened. Season with salt and pepper to taste.

Serve the Dinner
Slice the meat loaf and serve it with roasted Brussels sprouts, wild mushroom hash, and drizzle with rich brown gravy.
