    Prepare the Filling

    In a mixing bowl, combine the shredded Cheddar cheese, smoked Gouda cheese, softened cream cheese, diced jalapeños, and crumbled bacon. Mix until well combined.

    Assemble the Eggrolls

    Place an egg roll wrapper on a clean surface with a corner pointing towards you. Spoon about 2-3 tablespoons of the filling onto the center of the wrapper. Fold the bottom corner over the filling, then fold the sides in and roll tightly to seal. Repeat with remaining wrappers and filling.

    Fry the Eggrolls

    In a deep frying pan or skillet, heat oil over medium heat. Once the oil is hot, gently place the eggrolls in the oil and fry until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

    Serve the jalapeño poppers eggrolls hot with ranch dressing on the side for dipping.
